Indonesian Food Science and Technology Journal (IFSTJ) is an International peer-reviewed journal, open access, accredited by Ministry of Education, Culture, Research, and Technology of the Republic of Indonesia as 1st rank journal in Indonesia (SINTA1) and Indexed by SCOPUS. The journal contains original research articles and scientific review includes research in the scope of advanced research in the field of Food Science and Technology (food chemistry and analysis, food processing and engineering, food microbiology, food safety, risk, security, reliability and quality, food engineering, food nutrition, functional food and nutraceuticals, food novelty and innovations with a particular emphasis on the Indonesian food as well as other regions that have similar or relevant to Indonesian food.
Beginning with the forthcoming Vol. 9 No. 1 edition (December 2025; July-December 2025 period), the Indonesian Food Science and Technology Journal (IFSTJ) will use an In Press publication format to speed the dissemination of scientific knowledge.

This issue has been available online since July 26, 2025 for the regular issue of July 2025. All articles in this issue (15 original research articles and 3 review articles) were authored/co-authored by 91 authors and 50 institutional affiliations from the top 10 Indonesian Universities/QS World University Ranking 2026 (Gadjah Mada University, IPB University, ITS Surabaya, Diponegoro University, Brawijaya University, Padjajaran University) as well as other high reputable universities and research centres in Indonesia and also authored/co-authored from foreign countries (Thailand, Malaysia, Buthan, Bangladesh, Saudi Arabia, Algeria).
